How to Make a Healthy Pancake for Toddlers

Making a healthy pancake for my toddler is a daily routine in our home. It’s important to me to begin my son’s day off with a variety of proteins and healthy fats. This is a 5-minute, easy-peasy way to do it!

Ingredients:

  • 1 pasture-raised egg
  • 1 tablespoon of organic, ground flaxseed
  • either 1 tablespoon of unsweetened apple sauce or 1 tablespoon of dairy-free yogurt. I like the Cocojune brand!
  • 1/3 scoop of vegan, gluten-free, heavy-metal-tested protein. I like the Arbonne brand (vanilla)!
  • 1/2 teaspoon of ground cinnamon

Instructions:

  • Heat oil–coconut, avocado, or ghee–in a pan
  • Mix the egg and the apple sauce or yogurt
  • Mix in the protein, cinnamon, and ground flaxseed, and stir until well mixed
  • Once oil is slightly heated, add the batter and cook on medium until brown on both sides.
  • Serve topped with ghee and let your Little One enjoy!

Why is this our go-to toddler breakfast?

Many of our days are on-the-go, and meal times can sometimes be rushed. Add onto that the fact that most snacks for kiddos these days are heavy on sugar and carbohydrates. I want to make sure my son’s day starts high in healthy fats and proteins so the nutrients of his day don’t sneak away from us.

I’m also a big believer in the importance of balancing our blood sugar. Balancing blood sugar as an adult gives me good energy throughout my day and is a contributor to healthy, well-functioning hormones. Similarly, it is critical to me that my son’s energy is level (no energy spikes and major crashes) throughout the day.
